Food is MedicineWhile many 21st century medical treatments still focus on symptoms, new scientific research is establishing the relationship between nutrition and our health.Childhood obesity is becoming increasingly prevalent around the globe. Despite recent increases in life expectancy, this rise in obesity levels may reverse this trend. For the first time researchers have suggested that children born today may live shorter lives than previous generations. While medications are helpful to patients with diabetes and other chronic disorders, these medications alone will not cure the patient and will likely lead to further side effects and disease symptoms. Mass produced, pesticide sprayed produce, fruit, and concentrated poultry, meat, and dairy products are cheaper, more readily available, but are less healthy for our children, families, and long term for our world. We need to find ways to increase the healthier, organic local food options available in our communities. Our goal is to increase organic and local food products in the regions we serve, and to facilitate their distribution in these markets. As agricultural land is preserved and placed back into organic, sustainable production models, more local and healthy alternatives will be available to our communities.
